South African Indian Curry Spice Recipe

A recipe for the Indian curry lover.

Masala is the base for all Indian curries, it can be used by itself to flavour many meat, poultry or fish dishes.

The ingredients are available from your local Indian spice shop. However, if you want a selection of ready-made South African Indian Curry Spice, Sedo Snax has many for you to choose from.

MASALA (all ingredients are ground)

CORIANDER     100g

CUMIN                 80g

CARDAMOM      30g

CLOVES                 15g

CINNAMON        15g

NUTMEG             10g

MACE                    10g *

BAY LEAF              3g

PEPPER                 10g

STAR ANISE        3 stars*

 

CURRY

To make the curry combine the ingredients above with those below. This will make a Medium Hot(spicy) curry, but you can adjust the amount of chili to your taste.

TURMERIC          100g

GINGER                40g

CHILI (VH)           30g

FENUGREEK       5g*

Many Indian curries are made with Yoghurt but Coconut Milk can be used as a substitute. This will make the sauce thicker and creamier.
